What Is a Mango Pitter?
All of the mango-cutting methods listed above have one thing in common: You need to slice the mango into three parts to get rid of the pit. You can skip this step and buy a mango pitter, a kitchen tool that cuts the fruit into three perfect pieces for you. Mango slicers have a sharp blade that removes the two halves from the pit and salvages as much of the fruit as possible.
A mango pitter isn’t necessary, but it will help you get the perfect cut mango every time so you can worry less about prep and focus more on your delicious recipes.

- What about what’s left on the pit still? It’s a sad story, but it’s impossible to get ALL the mango off the pit. It’s not like a peach, where the fruit separates from the pit easily. I’ve been known to get in there and eat the mango right off the pit as much as I can before tossing it. I highly recommend it.
- How much does one mango yield? A smaller mango may only yield 1/2 a cup to 1 cup. A larger one, like the JUMBO one I used, may yield up to two cups. It all depends on the size.

How to peel a mango with a glass
A popular hack for peeling a mango involves an unconventional tool: a drinking glass.
First, slice the fruit off the pit on each side. Take one slice and position the bottom edge over the lip of a sturdy drinking glass so that the curve of the fruit lines up with the curve of the glass. Press down using your hand, allowing the edge of the glass to force itself between the fruit and the peel. The peeled fruit will simply drop into the glass.
For a fruit that is notoriously hard to peel and chop, this hack does save time and effort. Medium to large mangos are best for this trick, since small mangos won’t line up properly. Make sure to use a sturdy glass and use caution when pressing down since a weak glass could shatter. Note that while you’ll end up with a couple of chunks of quickly peeled mango, there’s still plenty of fruit left attached to the pit.
How to Cut a Mango Into Cubes
The easiest way to slice a mango is to cut it into cubes. You’ll need:
- Cutting board
- Sharp knife
- Small paring knife
- Spoon (optional)
- Using one hand, stand the mango on its end with the stem facing up (so you can use it as a guide to know where the mango pit is). With your other hand, take a sharp knife and slice down on one side of the pit, slightly off-center (to avoid slicing through the pit).
- Repeat on the other side of the pit. You’ll have three mango pieces: two halves and the slimmer middle section, which contains the pit.
- Take one mango half and using a knife, make lengthwise and crosswise cuts in the shape of a grid, avoiding cutting through the skin. Invert the mango so the mango cubes stick out.
- Peel the mango cubes off with your fingers, scoop them out with a spoon, or cut them away from the skin with a small paring knife. Repeat with the other mango half
- Using the small paring knife, cut the pit out of the third mango piece and remove the peel. Slice off any extra edible scraps so they don’t go to waste.
How to store sliced mango
Fresh, sliced mango should be stored in an airtight container in the refrigerator. It will keep for two to three days this way. To prevent any minor discoloration, toss the fruit with a squeeze of fresh lime juice before storing.
Mango is also great for freezing. Cut the fruit into slices or cubes and spread out on a parchment-lined baking sheet. Place in the freezer for an hour or until the mango pieces are completely frozen. Place the fruit in a zip-top freezer bag and store for up to six months. Frozen mango adds sweet flavor and creaminess to smoothies and frozen cocktails. Thawed, the fruit will be a bit softer than fresh but can still be used in fruit salads or puréed for sauces and desserts.
Technique 2: How to cut a mango in the peel
Dicing the mango in the peel will result in more beautiful, clean cuts. You’ll get gorgeous pieces of mango as a result, but it takes a little more time, patience, and knife finesse.
Step 1: Score the mango
After cutting the sides of the mango off, use a small, sharp knife to score the mango flesh in both directions. Carefully cut all the way to the peel, but not through it. Tip: I use this same technique to cut avocado, before using a spoon to remove it from the peel.
Step 3: Invert the peel
Use your hands to push the center of the peel from behind, to invert it. The cubes of mango will separate out, making them easily accessible.

Use a small paring knife to cut the cubes off of the mango peel, as close to the peel as you can.

How can you tell if a mango is ripe? It all comes down to how the fruit feels and smells. Just like peaches and avocados, ripe mangos will give a little when gently squeezed. If it’s rock hard or excessively squishy, keep looking. Ripe mangos tend to also feel heavy for their size; this usually means they’re full of juice and ready to eat. Also give the fruit a good sniff at its stem before you buy. Sometimes you’ll be able to note a sweet, mango aroma—but don’t worry if you don’t. Just be sure there isn’t a sour or alcoholic smell, meaning the mango is overripe.
If you’re not going to eat it right away, snag a mango that’s a smidge under-ripe and leave it on the kitchen counter for a few days until it’s soft. You can speed up the mango ripening process by placing the mango in a brown paper bag with a banana, rolling it closed and leaving it on the counter for a couple days. If you have an already-ripe mango on your hands, storing it in the fridge will halt the ripening process and keep it from turning to mush.
